The eggnog cheesecake recipe is very simple, the dessert is composed of a cookie base then enriched by the eggnog cream without mascarpone, which you can always add if you prefer.

Zabaglione cheesecake

Ingredients

  • 1 1/4 cups cocoa cookies
  • 5 tbsp butter
  • 6 egg yolks
  • 1/2 cup sugar
  • 3.4 oz sparkling wine

Steps

  • Melt the butter, crush the cookies and add the butter, mix well to obtain a moist mixture.

  • Place the cookies in a 7.8-inch pan, slightly oiled or lined with plastic wrap, it’s unnecessary because the cake doesn’t stick, and put it in the freezer.

  • Work the egg yolks with the sugar in a saucepan, then add half of the sparkling wine and continue to work.

  • Put a larger saucepan with water on the stove, when it’s hot, place the saucepan with the egg yolks and always work with a whisk for about 4-5 minutes until the mixture swells and becomes more solid.

  • If you have a thermometer, the temperature should reach 176°F.

  • At this point, move from the stove, if you prefer, add the mascarpone, 18 oz will be perfect, or pour the eggnog cream onto the cookie base as I did.

  • Put the dessert in the freezer for about an hour, it doesn’t freeze, you can take it out and cut it immediately without problems.

  • Decorate the dessert with berries and rosemary.
