Melamangio apple cake with cream and chocolate

Ingredients

  • 3 eggs
  • 1/2 cup sugar
  • 3/4 cup all-purpose flour
  • Half lemon juice
  • 1 teaspoon baking powder
  • 2 Golden apples
  • 4.2 oz 60% dark chocolate
  • 1/4 cup milk
  • 0.4 oz butter
  • 8.8 oz custard

Steps

  • Prepare the custard following this recipe and let it cool.

  • Prepare the chocolate glaze, pour the cream or milk into a saucepan, heat it, then add the pieces of dark chocolate, the butter, and stir to make it smooth. Let it cool.

  • Preheat the oven to 356°F

  • Whisk the eggs with the sugar until they triple in volume, just like for a sponge cake.

  • Add the chopped apples, mix, then add the lemon juice and flour with baking powder delicately, folding by hand from bottom to top.

  • If using a mixer, perform this last step at the lowest speed.

  • Pour the mixture into a 9-inch cake pan lined with parchment paper, level it, and bake for about 25 minutes. Do a toothpick test before removing from the oven.

  • Remove from the oven, let it cool slightly, turn it over onto a serving plate, spread cold custard over it, then pour melted chocolate.

  • Put the cake in the fridge for 30 minutes, then decorate with a pastry syringe or bag. I made a grid with Nutella.
