Fake Panettone with Chocolate

Ingredients

  • 4 eggs
  • 1 2/3 cups all-purpose flour
  • 3/4 cups sugar
  • Half packet baking powder
  • 1/3 cup vegetable oil
  • 1/2 cup milk
  • 1 lemon zest
  • 1 orange zest
  • 2 oz dark chocolate
  • 1 egg white
  • 1 cup powdered sugar

Steps

  • Beat the eggs with the sugar until very frothy.

  • Gradually add the sifted flour with the baking powder, folding gently by hand or with beaters.

  • Alternate the flour with oil and milk, add the citrus zests.

  • Pour the mixture into a panettone mold, add the dark chocolate pieces; if they are too large, they may sink to the bottom, yet the batter is very soft.

  • Bake at 350°F in a hot oven, for about 25-30 minutes, always perform a toothpick test.

  • If needed, extend the time a bit; I found 25 minutes to work well.

  • Remove from oven, let cool a bit, and dust with powdered sugar or prepare a white glaze and cover the panettone.

  • Beat the egg white to stiff peaks with a pinch of salt and 2 drops of lemon juice, then add the powdered sugar and mix a bit to combine the mixture.

  • Let the glaze dry before serving.
