The recipe to prepare these delicious apple and jam bomboloni is very simple, you just need to prepare the classic shortcrust pastry with flour, sugar, eggs, butter, and baking powder to make them rise, then a simple filling of apples and jam, I’m sure you have everything you need at home to prepare them.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 eggs
  • 1/2 cup sugar
  • Half packet baking powder
  • 1/2 cup butter
  • 1 apple
  • 1/3 cup apricot jam

Steps

  • Pour the flour into a bowl, add the baking powder and mix, the sugar, eggs, and softened butter, start working the ingredients and add a pinch of salt.

  • Then work the dough on the work surface and roll it out, cut 16-18 discs of about 2 inches.

  • Peel and cut the apple into small cubes, fill half of the discs with apples and jam then pair them and seal the edges by rolling them on the palm of your hand to form a sort of ball.

  • Place the bomboloni on the baking tray lined with paper, bake them at 350°F for about 15 minutes, they should brown, during baking they flatten a bit.

  • Take them out of the oven, let them cool down, dust with powdered sugar, and serve.
