The recipe for almond panpepatelli, taken from an old recipe book, is perfect if you’re looking for Christmas sweets. You’ll need very simple ingredients that you surely have at home: flour, sugar, eggs, spices, lemon or orange zest, and of course, almonds.

These cookies are a kind of sweet gingerbread, very good and fragrant, and I can say they are truly delicious like this.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 large egg
  • 1 egg white
  • 1/2 cup sugar
  • 2 1/2 oz almonds
  • 1/2 teaspoon spices
  • 1/2 lemon zest (or orange)

Steps

  • Work the egg yolk with the sugar in a bowl until you get a sort of cream.

  • Place the flour in a bowl and pour the creamed yolks over, add the spices, I chose cinnamon, and the lemon or orange zest.

  • Beat the egg whites with a pinch of salt until stiff and fold them into the mixture.

  • Cut the almonds into pieces and add them to the mixture, mix well, if needed add an egg yolk.

  • Line a baking tray with parchment paper and use a spoon to drop the mixture onto the tray, forming ovals.

  • Bake in a preheated oven at 350°F for about 15-18 minutes.

  • Remove from the oven and sprinkle with powdered sugar.
