The Day of the Dead cookies are made on the Day of the Dead, or for Christmas, they are typical of the Marche region but are prepared in many other regions, crunchy and lemon-scented.
The recipe for Day of the Dead cookies is very simple, you prepare a dough with almonds ground into flour, flour, eggs, butter, and lemon zest, cinnamon if you like, and you make these small cookies.

Ingredients
- 3/4 cup almonds
- 1/2 cup all-purpose flour
- 1/3 cup sugar
- 1 tbsp butter
- 1 egg
- 1 lemon zest
- 1 pinch ground cinnamon
Steps
Grind the almonds into flour and put them in a bowl, add the flour, sugar, egg, and lemon zest.
Start working the ingredients then add the butter and cinnamon if you like, place the dough on a work surface and knead it until smooth, it takes only a few minutes.
Make logs with the dough about 3/4 inch wide and cut into pieces of about 3/4 inch, similar to gnocchi.
Press each piece with your index finger and place them on a baking sheet lined with parchment paper, you will get about 50 cookies.
Bake in a preheated oven at 350°F for 15 minutes, they should turn golden.
