- Difficulty: Very easy
- Cost: Very cheap
- Preparation time: 10 Minutes
- Portions: 6-8
- Cooking methods: Stovetop
- Cuisine: Italian
- Seasonality: All seasons
Ingredients
- 2 1/2 cups all-purpose flour
- Half packet baking powder for desserts
- 3/4 cup milk
- 1 egg
- 2 tbsps extra virgin olive oil (or your preferred oil)
- 1/4 cup sugar
- 7 oz apricot jam
Steps
Pour the flour with the baking powder into a bowl, add the egg, and start mixing the ingredients.
Add the milk a little at a time and work energetically with a whisk by hand or with a spoon.
Also add the oil and a pinch of salt, mix well.
Oil a 9-inch pan, heat it, and pour half of the mixture; if it’s slightly less than half, it’s fine. Try to spread the mixture in the pan or at least give it a round shape.
Cook for about 7 minutes on medium-low heat, check the bottom of the dessert, lower the heat to the minimum towards the end, and cook until the base is colored.
Bubbles will begin to form on the top, add the jam in spoonfuls and pour the rest of the mixture, trying to cover the entire bottom part.
Continue cooking with the lid on for 4-5 minutes, if it’s well-cooked underneath, it’s time to flip it with the help of a plate.
Slide the focaccia onto the plate from the bottom side, that is, the cooked side, do not flip it otherwise the dough will stick to the plate.
If needed, add a little oil to the pan, cover the focaccia with the pan, and at this point, flip it with the help of the plate.
Continue cooking with the lid on for another 3-4 minutes.
When the dessert is cooked, remove it from the pan, sprinkle it with powdered sugar, and serve.
Bon appetit
