Ingredients

  • 1.1 lbs beef (I use scottona)
  • 1 onion
  • 2 carrots
  • 2 stalks celery (omitted)
  • 2 cloves garlic
  • 6.8 oz red wine
  • 2 leaves bay leaf
  • to taste all-purpose flour

Steps

  • Slice the onions, celery, and carrots with a mandoline. I omitted the celery because I didn’t have any. Place them in a pot with oil and sauté.

  • Flour the meat and add it to the chopped vegetables, browning it well by turning the meat over, then add the red wine and let it evaporate by cooking for a few minutes.

  • Add beef broth or, if unavailable, hot water as I did, the bay leaves, and let it cook.

  • Reduce the heat to medium-low, cover the pot, and let it simmer for at least a couple of hours, or until the meat is tender and easily falls apart.

  • During cooking, be sure to stir occasionally and add a bit of water or broth if the liquid reduces too much.

  • When the stew is ready, taste it and adjust with salt and pepper to your preference.

  • Serve the stew hot, possibly accompanied by mashed potatoes, polenta, or crusty bread.
