Ingredients

  • 2 cups milk
  • 1/2 cup sugar
  • 4 egg yolks
  • 2 tbsp flour

Steps

  • Start by heating the milk in a saucepan over medium heat. Don’t bring it to a boil, but let it heat until bubbles start to form at the edges of the saucepan. Once hot, remove the saucepan from the heat.

  • Meanwhile, in a separate bowl, beat the egg yolks with the sugar until you obtain a light and fluffy mixture. You can do this with a hand whisk or an electric mixer.

  • Add the flour to the beaten yolks and mix well until you obtain a smooth mixture.

  • Now, gradually pour the hot milk into the beaten yolks, stirring constantly to prevent the eggs from cooking upon contact with the hot milk. This step is known as “tempering” the eggs.

  • Pour the egg and milk mixture back into the saucepan and return the saucepan to the stove over medium-low heat. Add the vanilla extract and a small pinch of salt.

  • Continue to stir constantly with a spatula or whisk until the cream begins to thicken. This may take about 5-7 minutes.

  • When the cream has reached the desired consistency (it should be thick enough to coat the back of a spoon), remove from the heat.

  • Pass the cream through a fine sieve into a clean bowl to remove any lumps or small particles.

  • Let cool at room temperature for a few minutes, then cover the surface of the cream with plastic wrap, ensuring the wrap touches the cream directly to prevent a skin from forming on the surface.

  • Place the cream in the refrigerator and let it cool completely. It usually takes at least 2-3 hours to cool completely.
