Microwave Potato Cake is a new recipe to add to my Microwave Recipes, a delicious and very easy savory cake to prepare!
After cooking potatoes in the microwave in various ways, like Roast New Potatoes in the Microwave or Gratin Potatoes in the Microwave, I decided to make this cake with a base of potatoes without dough, but cooked in the microwave and then mashed directly in the baking pan! Genius, right? You can then fill the microwave potato cake as you wish, I chose fresh baby spinach accompanied by cherry tomatoes and a cream similar to that of a quiche!

Ingredients
- 1.5 lbs potatoes
- 0.85 cup water
- 2 tablespoons breadcrumbs
- 1 teaspoon coarse salt
- extra virgin olive oil
- paprika
- pepper
- 0.5 cup Greek yogurt
- 0.3 cup cooking cream
- 2.5 oz spinach
- 2.5 oz cheese
- 4 cherry tomatoes
- 2 tablespoons grated Parmesan cheese
- salt
- pepper
- paprika
What you need for the potato cake

How to prepare the potato cake in the microwave
Wash the potatoes and place them in a large bowl.
Add one teaspoon of coarse salt and 200 ml of water.
Cover the bowl with microwave-safe plastic wrap and cook in the microwave at 800 W for 30 minutes.
Pour a drizzle of oil on the bottom of the baking pan and grease it evenly.
Sprinkle some breadcrumbs on the bottom, then place the boiled potatoes previously microwaved inside.
Mash the potatoes with a glass to create a uniform base.
Season with a pinch of salt.
Also add, if desired, pepper and paprika. Optionally, you can also add herbs like rosemary or thyme.
Set aside.
Place fresh baby spinach and cherry tomatoes halved on the potato base.
In a bowl, pour cream along with yogurt and egg.
Add grated Parmesan cheese.
Whisk the ingredients to combine and pour the mixture over the potato cake.
Add grated soft cheese, a little paprika, and bake in the microwave oven.
Cook the potato cake in the microwave for 10 minutes with the combined 1, microwave+grill function.
Then transfer the cake to the appropriate stand and continue cooking for another 5 minutes to gratinate the surface.

The microwave potato cake can be kept in the fridge for up to 3 days.
