Ingredients for Whole Wheat Honey Cookies
- 3 1/3 cups whole wheat flour
- 3 tbsp honey
- 7 tbsp butter (or 1/3 cup sunflower seed oil)
- 1/3 cup granulated sugar (or cane sugar)
- 1/4 cup milk (or plant-based drink of choice)
- 1 egg (medium-large)
- 1 packet baking powder
- 1 packet vanillin (or the grated zest of 1 lemon or orange)
- 1 pinch salt
How to Prepare Whole Wheat Honey Squares
Dough Preparation: In a large bowl, work the softened butter (or oil) with the sugar until you obtain a cream.
Add the whole egg, honey, milk, and vanillin (or grated zest). Mix well to combine.Adding the Flour: Sift the whole wheat flour with the baking powder and a pinch of salt.
Gradually add the powders to the wet ingredients and start kneading, first with a spoon and then with your hands.
Work the dough just enough to obtain a smooth and firm dough ball. Avoid over-kneading.Rest: Wrap the dough in plastic wrap and let it rest in the fridge for at least 30 minutes.
This will make it easier to work with.
Shaping the Squares: Take the dough and roll it out on a lightly floured surface with a rolling pin to a thickness of about 3/16 to 1/4 inch.
Using a knife or a pastry wheel, cut the dough into squares or rectangles of your desired size.You can lightly brush the surface with some milk and sprinkle with cane sugar, we scored the surface using the prongs of a fork.
