These mascarpone croissants are delicious and can be prepared with a simple hand-made or robotic egg-free dough, let it rest, then roll it out and cut triangles to fill with Nutella, jam, or custard.
The mascarpone croissants are made with a very simple recipe, flour, sugar, butter, yeast, and mascarpone instead of eggs, which you can replace with ricotta if you prefer something lighter.

Ingredients
- 2 1/2 cups all-purpose flour
- 1/4 cup sugar
- 1 1/2 tbsp butter
- 1/4 cup mascarpone
- 1 pinch salt
- 1 lemon zest
- 1 tsp fresh yeast
- 2/3 cup milk
Steps
Dissolve the yeast in the milk, pour the flour into a bowl, add the sugar, grated lemon zest, softened butter, and mascarpone.
Start kneading by adding the milk, make a ball and let it rest in a bowl covered with film until doubled, about 6 hours, depending on the external temperature.
After the time has passed, roll out the dough on a floured surface forming a sort of pizza, draw a cross, then trace the diagonals to form 8 triangles.
Fill the triangles with Nutella, then roll starting from the base, curve the tips inward, and let rest for another 20 minutes on the baking sheet covered with parchment paper.
Preheat the oven to 350°F, bake and cook for about 10-15 minutes.
Bon appétit
