Ingredients for Quick and Simple Roasted Tomatoes
- 6 ripe, fresh tomatoes (of the same size and a total weight of about 2 lbs and 10 oz)
- 3.5 oz extra virgin olive oil
- to taste fine salt
- to taste mixed peppercorns (freshly ground)

Preparation of Simple and Delicious Roasted Tomatoes
Remove any stem from the tomatoes, wash them well, dry them, and cut them in half. Place the tomatoes in the baking tin with the open side up, make crisscross cuts on the surface (2 in one direction and 2 in the other).
Salt the tomatoes, add freshly ground pepper (amount to your taste), and use a spoon to drizzle over the oil specified in the recipe.
Preheat the oven to 482°F and once at temperature, bake the tomatoes. Cook for 55 minutes, after the first 50 minutes, turn on the grill function and continue cooking for an additional 5 minutes. Midway through cooking, briefly remove the tin and spoon the juices that have formed back over the tomatoes.
Once the simple roasted tomatoes are cooked, remove them from the oven and enjoy, excellent both hot and cold!

Notes
If you like, you can add finely chopped garlic and/or parsley to the seasoning, but add them halfway through cooking.
Once cooled, you can store the roasted tomatoes in the fridge for 2 days in an airtight container.
