The pistachio chatters ribbons are delicious and very simple to prepare with a quick and good dough, they flake in the mouth, roll out the pastry and cut and fill, either fry or bake them for a lighter dessert.
A really easy recipe to make the chatters ribbons, prepare the basic dough with the grandmother’s chatter dough, then proceed to create the shapes.
The pistachio chatters are a traditional Italian sweet, perfect for celebrations. The original recipe calls for flour, eggs, sugar, and butter, but I decided to add an extra touch to our version with a delicious shape and filling.
The result is crunchy and fragrant chatters, with a delicate pistachio flavor. Not only are they delicious, but they’re also very nice to look at in the form of ribbons and decorated with colorful sprinkles.

Ingredients
- 3/4 cup flour
- 1 egg
- 3 1/2 tbsp butter
- 1 tsp baking powder
- 1/2 lemon zest
- to taste pistachio paste
- 1 egg (for brushing)
- to taste glittered sugars
- Half packet vanillin
Steps
Pour the flour into a bowl with the baking powder, add the butter, vanillin, grated lemon zest, and the egg, knead well.
Divide the dough into two or 3 parts and roll them out on a floured surface.
Cut out even numbers of rectangles, considering that the pastry must be thin you should be able to get about 25-30 ribbons.
Fill only the center of half of the ribbons then pair the pastries, take the sides and twist them on themselves, you have obtained the ribbons, then place them on the baking sheet lined with parchment.
Brush with the egg and decorate with the sprinkles, bake in the preheated oven at 350°F for about 10 minutes.
I cooked them in the air fryer at 350°F for 5-6 minutes turning them halfway, dust with powdered sugar.
