Butterless and Oil-Free Croissants with Nutella

Ingredients

  • 2 cups all-purpose flour
  • 1 egg
  • 1/3 cup sugar
  • 3.4 oz milk
  • as needed orange zest (or lemon)
  • 1.8 oz yogurt
  • as needed Nutella®
  • 0.1 oz fresh yeast
  • 1 pinch salt

Steps

  • Dissolve the yeast in the milk in a bowl, add the flour by mixing with a spoon.

  • Add the egg, sugar, grated zest of an orange or lemon, yogurt, and a pinch of salt.

  • Knead well, make a rectangle, bring the short side toward the center and cover with the other short side, make a ball and let it rest in the bowl covered with plastic wrap until doubled.

  • Put the dough in the turned-off oven with the light on, it will take about 5-6 hours to rise.

  • After the time has passed, take the dough and form a sort of pizza, cut a cross then the diagonals to form 8 triangles.

  • Fill with Nutella at the base then roll up and curve the tips inward, place the croissants on the tray lined with paper, brush with an egg yolk and let them rest for 20 minutes.

  • I prepared the croissants in advance, let them rest for 20 minutes then put them in the fridge all night, the next day I took them out of the fridge and let them stand for 20 minutes.

  • Turn on the oven to 350°F and bake for 15 minutes.
