Ingredients
- 2 1/2 cups all-purpose flour
- 1 egg yolk
- 3 oz 0% fat Greek yogurt
- 2 tbsp butter
- 1/3 cup sugar
- orange zest
- 1 1/2 tsp fresh yeast
- 1/2 cup water
Steps
Dissolve the yeast in water or milk if you prefer and pour it into the processor.
Add the flour, sugar, the yolk with yogurt, orange zest, and start kneading, then add the butter and continue working until you get a smooth and soft dough.
The dough is very soft but not sticky, if needed add some flour, shape it into a rectangle, bring the short side towards the center and cover with the other short side.
Form a ball and let it rest covered with plastic wrap in the warmed oven or with the light on until doubled for about 5 hours.
I used a slightly higher dose of yeast because it was cold and I didn’t have much time, of course, you can reduce it and extend the resting time, maybe overnight.
After the time has passed, take the dough and form a rectangle with your hands on the floured surface, no rolling pin is needed, it stretches very easily.
Fill as you prefer, Nutella, jam, or custard, or leave it unfilled, roll and close into a bundt.
Let it rest for at least 30 minutes then preheat the oven to 350°F, bake for about 20 minutes, do a toothpick test before taking it out of the oven.
