Ingredients
- 2 cups all-purpose flour
- 1 egg yolk
- 1/3 cup sugar
- 1 pinch salt
- 1/2 cup lard (or butter)
- 3/4 cup ricotta cheese
- 5.5 oz salami
- 2 oz mozzarella cheese
- 2 oz provolone cheese
- 1 egg
- 2 tbsps grated Parmesan
- 1 pinch pepper
- 1 egg (for brushing)
Steps
Prepare the shortcrust pastry, pour the flour into a bowl or robot, add the sugar, egg, lard or butter in pieces, sugar, and salt and knead everything well.
Cut the cured meats and cheeses into pieces, put the ricotta in a bowl and add the cured meats, cheeses, salt, pepper, and egg, mix everything well.
Roll out the pastry on a floured surface and make a sort of pizza, draw a cross then the diagonals to form 16 triangles or 8 if you want them large.
Fill them with the filling and close, turn the tips inward, place the croissants on the baking sheet lined with paper and brush them with the beaten egg.
Bake in a preheated oven at 365°F for about 15 minutes.
