Single-Serving Tiramisù with Pandoro

Ingredients

  • 1 slice pandoro
  • 500 g mascarpone
  • 2 egg yolks
  • 60 g sugar
  • 2 egg whites (optional)

Steps

  • For the mascarpone cream, you can use whole eggs or just the yolks.

  • Pasteurize the yolks by beating them with a hand whisk in a bain-marie with the sugar for 3 minutes; they should not cook, or they will curdle.

  • A fluffier cream is obtained by whipping the egg whites to stiff peaks, but you can also omit them; if not, whip them and then fold them into the rest of the cream.

  • Work the mascarpone with the yolks, then add the egg whites.

  • Crumble the pandoro and place about a tablespoon at the bottom of the glasses, add the cream, and dust with cocoa.

  • Of course, you can make more layers of pandoro if you prefer, then refrigerate until serving or for at least 30 minutes.
