- 3 oz butter
- 1 tbsp extra virgin olive oil
- 3 tbsp water
- 1 pinch salt
- 1.8 oz smoked salmon
- 2.1 oz provola cheese

Prepare the basic dough, pour the flour into a bowl or mixer, add the butter in pieces, the oil, a pinch of salt, and the water, knead quickly.
Take the dough, dust the work surface and roll it out, cut the pastry with a diamond-shaped cutter of 2.75 inches in an even number.
Stuff half of the diamonds with pieces of salmon and provola then pair with the other pastry, seal the edges and place them on the oven tray.
Brush with oil then bake in a preheated oven at 356°F for about 10-12 minutes.
