Ingredients
- 3 eggs
- 2 1/2 cups all-purpose flour
- 1 1/4 cups water
- 7 tbsp extra virgin olive oil
- 1 packet instant yeast for savory preparations
- 1 1/2 tsp salt
- 7 oz fresh mozzarella
- 5 oz speck
Steps
Pour the water into a bowl, add the eggs and the oil, and mix with a hand whisk.
Add the flour little by little and the yeast, always stirring with the hand whisk.
Add the salt, the speck cut into pieces, and the fresh mozzarella, mix well with a spoon and pour it into a panettone mold or a 9-inch buttered and floured cake pan.
Oil the surface, add some breadcrumbs, bake and cook in a preheated oven at 350°F for 25 minutes, do a toothpick test, if needed extend the cooking for another 5 minutes.
If you use a high mold for panettone, the cooking times are slightly longer.
