Slavic Coffee Tart

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 egg
  • 3.5 tbsp butter
  • 5 tbsp extra virgin olive oil
  • 1/3 cup sugar
  • 1 cup pastry cream (coffee-flavored with instant coffee)
  • 2 egg whites
  • 1/2 cup sugar

Steps

  • Prepare the coffee pastry cream Here mine is with instant coffee, you can use moka coffee then set it aside covered with plastic wrap.

  • Pour the flour with the baking powder into a bowl, add the sugar, egg, butter, and oil and knead well then place the dough in a 8-inch baking pan lined with parchment paper.

  • Make a 1-inch rim and put the pan in the fridge to rest for at least 15 minutes.

  • Beat the egg whites until stiff with an electric mixer, when they are whipped add the sugar a little at a time while continuing to beat with the mixer.

  • Remove the pan from the fridge, fill with the cream and top with the meringue.

  • Bake in the preheated oven at 350°F for 25 minutes then remove from the oven and let cool before cutting.
