RISOTTO WITH MEAT AND SAFFRON, easy and creamy rice recipe, main dish idea for lunch or dinner to make in a short time with simple and tasty ingredients.
A delicious, very simple, and fragrant main course, the risotto with meat and saffron is definitely excellent, easy to make and perfect for both lunch and dinner.
The recipe for risotto with meat is my mom’s with an abundant amount of saffron because it gives that exceptional flavor and aroma, maybe it’s not a typical summer dish but risottos are good any time.
In my opinion, this could also be an excellent single dish if consumed in summer, we have both rice and meat but if you don’t like meat you can try other risottos such as with mushrooms, with escarole and sausage or with mushrooms and speck.

Ingredients
- 2 cups Arborio rice
- 0.66 lbs beef (stew meat)
- 1/2 onion
- 1/2 cup white wine
- 2 packets saffron
- 2 leaves bay leaf
- 7 tbsps butter
- 0.17 cups tomato puree
Steps
Chop the onion and brown it in a large pan separately toast the rice.
Add the meat to the onion, the white wine, and the bay leaves, mix to cook it well.
Cook the meat until it softens, adding water as it cooks over medium-low heat, it will take about an hour.
When the meat is tender, add the toasted rice, saffron, stir, add more water, then add the tomato puree and continue stirring for the rice cooking time.
Salt towards the end and add the butter, let it melt and serve immediately.
