- 2 eggs
- 2.1 oz sugar
- 2.8 oz all-purpose flour
- 1 teaspoon baking powder
- 10.6 oz apples
- 0.7 oz raisins
- 2 tbsp milk
- 2 tsp extra virgin olive oil
Steps
Soak the raisins in rum then drain and pat them dry with paper towels.
Beat the eggs with sugar until they double in volume, then gradually add the flour with baking powder, oil, and milk, always mixing with the electric whisk.
Add the raisins, chopped apples, mix well, then butter a 20 cm (8 inch) pan and heat it.
Pour the mixture and cook for about 7 minutes with or without a lid, then turn and cook the other side.
You can bake it in the oven if you prefer at 350°F for 15-20 minutes or in the air fryer, preheat at 350°F for 5 minutes then cook at 340°F for 20 minutes.
