Walnut and Chocolate Cookies

Walnut and chocolate cookies are delicate cookies suitable to be enjoyed at any time of the day.


At breakfast, as a snack, or for a sweet break, they will always be right to savor and to accompany tea, coffee, or various beverages.


These cookies are made with a delicious walnut shortcrust pastry that fully maintains, even after baking, the taste of this type of nut.

Without having to roll out the dough or cut shapes, they can be prepared in a short time, perhaps providing a piece of dark chocolate to place on top.


The shortcrust pastry can be kneaded a few days in advance and then stored in the fridge, so to get ahead with most of the work that the recipe requires, in case you intend to prepare them for tea or coffee with friends, for example.

You will bake fragrant and aromatic cookies that will make a moment of sharing with friends or family even more special and cared for.

Ingredients

  • 1 2/3 cups all-purpose flour
  • 2/3 cups sugar
  • 1 1/2 cups walnuts
  • 1/2 cups butter
  • 1 egg
  • 1 egg yolk
  • Half packet vanillin
  • Half packet baking powder

Tools

  • 1 Blender or mixer
  • 1 Bowl
  • 1 Spatula silicone
  • 1 Sieve for flour
  • 1 Baking Tray oven

Steps

  • To prepare the walnut cookies, blend the walnuts not too finely or chop them with a knife.

  • In a bowl, combine these with the soft butter in pieces, the sugar, and the vanilla extract.

  • Start to mix with the silicone spatula and then incorporate the egg and the yolk.

  • Work quickly and then add the sifted flour with the baking powder.

  • Put in the fridge to rest for a few hours after sealing the shortcrust with plastic wrap.

  • After the said time, create balls of about 25 g each, flatten them a bit, and place them spaced apart on a baking tray lined with parchment paper.

  • Create a cavity in the center in which to place a piece of dark chocolate, then sprinkle with walnut crumbs.

  • Bake at 338°F for about 12 minutes, then raise the tray level and wait a few minutes to brown the top of the cookies.

  • Let them cool on a rack.


    The walnut cookies are now ready.

Storage

At room temperature, in an airtight container for pastries, they keep for about 4-5 days.
