  • 3 large potatoes
  • 28 oz beef roast
  • to taste extra virgin olive oil
  • to taste fine salt
  • to taste black pepper
  • to taste dried sage
  • to taste dried rosemary
  • 1 clove fresh garlic

Steps for Preparing and Cooking the Roast:

  • Peel the potatoes and cut them into cubes, place them in a bowl, cover them with room temperature water and leave them in the water for about 30 minutes.

  • Take the roast, place it in a baking dish and season it with oil, salt, and pepper, massaging the ingredients well into the meat to flavor it, then turn it and add more extra virgin olive oil, salt, and pepper, and repeat the same process on this side.

  • Drain the potatoes well and dry them with absorbent paper or a cotton towel, then transfer them to a bowl and season them with extra virgin olive oil, salt, and pepper, and then add spices to your liking. We used dried sage and rosemary; toss the potatoes well to flavor them thoroughly.

  • Line the air fryer grill with parchment paper, then add a few sprays of extra virgin olive oil and a clove of garlic, add the potatoes, and place the roast in the center, then cook at 392°F for 30 minutes, turning the meat and the potatoes every 10 minutes to ensure even cooking.

  • After the time has passed, remove the meat from the fryer (leave the potatoes so they stay warm), then remove the string from the meat and slice it thinly.

    On a serving plate, place the potatoes and the meat on top, add the gravy that formed during cooking, and a few sprays of extra virgin olive oil.
