  • 1.75 oz blanched almonds
  • 1.4 oz grated parmesan
  • 3 tbsps extra virgin olive oil
  • 1 sprig rosemary
  • 1 sprig sage
  • to taste salt

Preparation of the Pork Tenderloin with Almond and Parmesan Crust

  • Preparing the pork tenderloin with almond and parmesan crust is very simple.

    First, coarsely chop the almonds and mix them in a bowl with the grated parmesan; also add the finely chopped sage and rosemary.

    Place the pork tenderloin in a baking dish and massage it on all sides with the extra virgin olive oil and salt.

    Sprinkle the pork tenderloin with the almond, parmesan, and herb mixture to cover it completely, then drizzle it with a little more oil.

    Insert the thermometer probe into the meat to reach the center, then place the pork tenderloin with almond and parmesan crust in a preheated oven at 392°F until the internal temperature reaches 158°F (depending on the thickness of the piece of meat, it will take about 35/40 minutes).

    If the almond crust browns too much during cooking, cover the tenderloin with a sheet of aluminum foil.

    When the pork tenderloin with almond and parmesan crust is cooked, take it out of the oven and wait a couple of minutes before slicing it into not too thin slices and serving.
