Simple Spelt Cookies with Chocolate

The simple spelt cookies with chocolate are delicious cookies suitable for breakfast, made with genuine ingredients, as they used to be.


In this recipe, spelt flour is used, which doesn’t offer a taste different from common flours, but perhaps just a slightly more aromatic and therefore better one.

There are many positive nutritional aspects associated with its consumption.


Spelt flour is particularly rich in proteins and B vitamins.

Spelt contains an essential amino acid that is missing or deficient in many other grains: methionine, which contributes to the synthesis of carnitine, cysteine, lecithin, taurine, phosphatidylcholine, and other phospholipids.


It can be widely used in the making of baked goods, both sweet and savory, thanks to its versatility and ease of baking.


In these cookies, to which this flour gives a rich flavor, we find a pleasant way to start the day.

They are intentionally not too sweet, suitable for all family members, and are great substitutes for various cookies or snacks, especially those ready-made.

Ingredients

  • 3 1/4 cups spelt flour
  • 2/3 cup sugar
  • 1/2 cup butter (softened)
  • 1 tsp vanilla extract
  • 2 eggs (medium)
  • 1 tsp baking powder
  • 1/3 cup milk (plus extra for brushing on top)
  • 1/4 cup unsweetened cocoa powder
  • lemon zest (from an untreated lemon)
  • 1 pinch salt
  • powdered sugar (optional)

  • 1 Baking Tray for oven
  • 1 Brush kitchen

Steps

  • To prepare the simple spelt cookies with chocolate, combine the sifted spelt flour, sugar, sifted baking powder, vanilla extract, softened butter chunks, and the two eggs in a bowl.

  • Start working the dough and meanwhile add the fine salt.

  • Also add a little milk. Add only as much as needed to obtain a soft but not sticky dough.

  • Weigh the dough and divide it in two.

  • Scent one of these two with grated zest of an untreated lemon and knead to incorporate.

  • In the other half, add 1/4 cup of sifted unsweetened cocoa and incorporate it well by adding also the necessary milk.

  • Wrap each dough in cling film and let them both rest in the fridge for 1 hour.

  • After this time, lightly flour the work surface and cut each dough into three parts.

    With each of these parts, create a long log with a diameter of slightly less than 1 inch. Cut it into many pieces about 4 inches long.

    Shape them and place them well spaced on a non-stick tray or lined with baking paper.

  • You will get about 12 white cookies and 12 cocoa ones.
    Brush the surface with milk.

  • Bake for 15 minutes, in the central part of the preheated oven, in static mode, at 340°F.

  • Let cool on a rack.

    Once cold, if desired, sprinkle with powdered sugar.

    The simple spelt cookies with chocolate are now ready.
