Chocolate desert roses are delightful chocolate and almond cookies that resemble desert mineral formations called “desert roses,” with their jagged shape reminiscent of rose petals.
These almond and chocolate treats are simple and quick to prepare and are perfect for breakfast or a snack.
Besides their delicious taste, which is familiar to those who have already enjoyed them, their characteristic feature is the crunchiness provided by the corn flakes that coat their surface.
The cookie’s simple ingredients include finely ground lightly toasted almonds to enhance the aroma, along with tasty dark chocolate chips that make them truly irresistible.
They look very inviting, and it’s hard for anyone to say no to these delicious cookies!

Ingredients
- 3/4 cup all-purpose flour
- 3 tbsp unsweetened cocoa powder
- 3/4 cup almonds (blanched)
- 1/2 cup butter
- 6 tbsp potato starch
- 1/2 cup sugar
- 1 tsp baking powder
- Half packet vanillin
- 1/3 cup chocolate chips
- 1 egg
- 3 1/2 cups corn flakes
- 1 pinch salt
- to taste powdered sugar (for decoration)

- 1 Baking tray non-stick
- 1 Mixer
- 1 Sieve
- 2 Bowls
Instructions
To enhance the almond’s fragrance, lightly toast them in the oven until just golden.
When cold, blend them in a mixer with the sugar until you get a fine grain.
In a bowl, mix together the all-purpose flour, almond grain with sugar, potato starch, vanillin, sifted baking powder, softened butter in pieces, egg, and salt.
You can already add the sifted cocoa powder at this stage, I added it later only because I wanted to make cookies both in the white and cocoa versions.
I then made a single dough, divided it in two, and added cocoa to only one.
After mixing the ingredients, when everything is well combined, add the chocolate chips and mix.
The result will be a rather sticky dough.
Scoop out spoonfuls of about 25 grams each, and if you want cookies all the same size, it’s best to weigh them each time.
Drop the dough balls directly into the bowl containing corn flakes, which we have slightly crushed with our hands to break up the large cereal petals.
Do not crush the corn flakes too much, or the cookies won’t have a curly appearance.
Press the dough balls slightly to compact them and adhere as many corn flakes as possible.
To do this, roll them several times in the cereal bowl.
Place the cookies slightly apart on a non-stick baking tray or one lined with parchment paper and bake in a preheated oven at 350°F for about 15 minutes, in the center of the oven, on static mode.
If you want, in the last few minutes, move up a level by activating the grill function, but be careful to prevent the cereals covering the cookies from darkening.
Do not let them get too golden.
Our chocolate desert roses are ready.
Sprinkle them with powdered sugar when cold.
