Ingredients for Easy Zucchini Pasta

  • 17 oz zucchini (weighed already cleaned)
  • 4 oz pasta
  • 4 oz golden onion (weighed already cleaned)
  • 3 tbsps extra virgin olive oil
  • to taste fine salt

Preparation of Easy Zucchini Pasta

  • Clean the onion and chop it very finely, place it in a non-stick pan with the oil and a pinch of salt, put on low heat and stir occasionally.

  • While the onion is slowly sautéing, clean the zucchini and cut them into small cubes, when the onion is golden add the zucchini to the pan, adjust the salt, stir occasionally and let it go for 15/20 minutes.

  • While the zucchini are cooking, bring the water to a boil, salt it and when it boils add the pasta, drain it well al dente and add it to the pan with the zucchini (which will now be cooked), mix for 2/3 minutes over medium heat, stirring constantly, plate and serve this easy and delicious zucchini pasta hot and steaming!

Tips

If you like, you can add freshly ground pepper when serving.

You can also add fresh chopped parsley.
