Grandma’s Cake

The Grandma’s Cake is a delicious dessert recipe to enjoy after a family lunch.

It consists of a fragrant, crumbly pastry shell filled with custard, all topped with powdered sugar and pine nuts.

The Grandma’s Cake is a timeless recipe perfect for any occasion and easy to make, accessible to everyone.

There are two preparation methods: a pastry base on both top and bottom, or a pastry base on the bottom with custard on top, without pastry, just with a sprinkle of pine nuts on top.

I prepared it using the first method; you can choose the one you like best.

Ingredients

  • 3 1/2 cups all-purpose flour
  • 5.3 oz soft butter
  • 1 cup powdered sugar
  • 2 eggs
  • lemon flavor
  • 2 tsp baking powder
  • 2 cups milk
  • 3 egg yolks
  • 1/2 cup sugar
  • 1/3 cup flour
  • lemon flavor
  • 0.9 oz pine nuts
  • as needed powdered sugar

Steps

  • Let’s start preparing the custard by mixing the egg yolks with the sugar in a saucepan until they are light and fluffy. Meanwhile, heat the milk in a separate pot.
    Add the flour and continue to mix with a whisk.
    Incorporate the warm milk and bring to a boil.

  • Add a few drops of lemon flavor, stirring continuously, until it becomes thick and dense.
    Pour the custard into a bowl, cover with plastic wrap, and set aside.

  • Prepare the shortcrust pastry with a mixer, if you have one, or by hand in a bowl.
    Start working the soft butter with powdered sugar, then add the eggs and finally the flour with baking powder.

  • You will get a soft dough, wrap it in plastic wrap and place it in the fridge for 30 minutes.

  • After the time has passed, we can prepare the Grandma’s Cake.
    Divide the dough and start rolling it out.
    Line a 9.5-inch diameter pan with dampened and squeezed parchment paper to help it adhere better.

  • Place the shortcrust pastry inside and prick the bottom with a fork.
    The pastry disk should have a 1.2-inch high edge to hold the custard.
    Incorporate the custard and cover with the other pastry disk.

  • Prick the top pastry disk with a fork, brush a little water with a brush, and sprinkle pine nuts on top.
    Bake at 340°F for about 30 minutes.
    Once cooled, transfer the cake to a serving plate and generously dust with powdered sugar on top.
