There are two preparation methods: a pastry base on both top and bottom, or a pastry base on the bottom with custard on top, without pastry, just with a sprinkle of pine nuts on top.

Ingredients
- 3 1/2 cups all-purpose flour
- 5.3 oz soft butter
- 1 cup powdered sugar
- 2 eggs

- 2 cups milk
- 3 egg yolks
- 1/2 cup sugar
- 1/3 cup flour

- 0.9 oz pine nuts

Steps
Let’s start preparing the custard by mixing the egg yolks with the sugar in a saucepan until they are light and fluffy. Meanwhile, heat the milk in a separate pot.
Add the flour and continue to mix with a whisk.
Incorporate the warm milk and bring to a boil.
Add a few drops of lemon flavor, stirring continuously, until it becomes thick and dense.
Pour the custard into a bowl, cover with plastic wrap, and set aside.
Prepare the shortcrust pastry with a mixer, if you have one, or by hand in a bowl.
Start working the soft butter with powdered sugar, then add the eggs and finally the flour with baking powder.
You will get a soft dough, wrap it in plastic wrap and place it in the fridge for 30 minutes.
After the time has passed, we can prepare the Grandma’s Cake.
Divide the dough and start rolling it out.
Line a 9.5-inch diameter pan with dampened and squeezed parchment paper to help it adhere better.
Place the shortcrust pastry inside and prick the bottom with a fork.
The pastry disk should have a 1.2-inch high edge to hold the custard.
Incorporate the custard and cover with the other pastry disk.
Prick the top pastry disk with a fork, brush a little water with a brush, and sprinkle pine nuts on top.
Bake at 340°F for about 30 minutes.
Once cooled, transfer the cake to a serving plate and generously dust with powdered sugar on top.
