To prepare the delicious light and protein-rich salad, start by trimming the zucchini and washing the vegetables under running water, then pat them dry with some paper towel
With a mandoline cut the zucchini into slices about 1/8 inch thick.
Grill them on a hot griddle, for 2-3 minutes per side, until the classic dark stripes form
Meanwhile, cut the cherry tomatoes in half.
On a serving plate, neatly arrange the grilled zucchini, cherry tomatoes, bresaola slices, and Parmesan shaves.
Dress with a mixture of extra virgin olive oil, fine salt, chopped parsley, and lemon. Decorate with a sprig of fresh mint and serve.

Use fresh and firm vegetables. Even better if they are local.
