Pistachio shortcrust pastry for tarts and cookies is a type of pastry enriched with pistachio paste, which gives it all the goodness and green color typical of this type of nut in both taste and appearance.
The pistachio paste used in this recipe was made by me at home.

Ingredients
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1/3 cup pistachio paste
- 7 tbsp butter (in pieces)
- 1 egg white (from a small egg)
- 1/4 tsp fine salt
- 1 1/3 packet vanillin

Preparation
To prepare the pistachio shortcrust, combine the flour, sugar, butter in pieces, pistachio paste, egg white, vanillin, and salt in a bowl and knead until you get a homogeneous mixture.
Let it rest in the fridge for at least half an hour.
If you are short on time and want to prepare a tart, you can immediately roll out the dough for the base, about 2/3 of the total dough, leaving the remaining shortcrust pastry in the freezer to cool.
This will facilitate the creation of the strips that go on top of the tart.
The pistachio shortcrust pastry for tarts and cookies is now ready.
Storage
You can freeze it for no more than a month. It can be stored in the fridge wrapped in cling film for a few days.
