Potatoes with smoked bacon and onions are an unparalleled treat. How many times have I enjoyed them in restaurants as an appetizer!
Remembering this, I wanted to recreate them at home for family and friends, and what can I say? They are great to serve as an appetizer at a rustic dinner and can also be used to fill pizzas and sandwiches.
Then served as an accompaniment to white meat, red meat, or fish, they will immediately change their role, becoming an ideal side dish even for less informal dinners.
Bring them to the table hot, and no one will be able to resist; their aroma will deliciously fill your house.

Ingredients
- 1.3 lbs potatoes (yellow-fleshed)
- 2.6 oz smoked bacon (diced)
- 2 onions (fresh)
- 5 tbsps extra virgin olive oil
- to taste oregano (or thyme)
- to taste rosemary
- to taste salt
- to taste black pepper (optional)

Preparation
To prepare the potatoes with smoked bacon and onions, peel the potatoes, cube them and blanch for 5 minutes in moderately salted water.
Meanwhile, in a non-stick pan, brown the smoked bacon in extra virgin olive oil.
Once browned, remove and set aside.
Drain the potatoes and return them to the same oil used for the bacon.
Season to taste with rosemary, oregano (or thyme), and, if desired, with pepper. No need to add salt.
Cook for about 10 minutes over high heat, turning occasionally for even cooking.
Add the fresh onion sliced into thin rings to the potatoes and wait for them to color, stirring frequently.
A few minutes before removing the pan from the heat, add the bacon that was already browned and let everything blend in flavors.
The potatoes with bacon and onions are ready to be enjoyed.
Storage
To enjoy them at their best, it is advisable to consume them immediately; in any case, they can be kept in the fridge well sealed for a couple of days.
