Matcha Green Tea Shortcrust Pastry

Ingredients

  • 1 2/3 cups all-purpose flour
  • 2/3 cup brown sugar
  • 1 tbsp matcha powder
  • 7 tbsp cold butter
  • to taste salt
  • 1 egg yolk
  • 1/2 tsp baking powder
  • 1/2 tbsp milk (or water)

Preparation

  • Prepare the matcha green tea shortcrust pastry (to find it click here), combine the flour, sugar, powdered tea, sifted baking powder, and salt in a bowl.

    Work them by hand or in a planetary mixer with the butter cut into pieces.

    Then add the egg yolk and knead until you obtain a firm and homogeneous dough.

    Wrap in plastic wrap and let it rest in the fridge for about two hours before using.

    Our matcha green tea shortcrust pastry is ready.

Storage

In the fridge wrapped in plastic wrap for a couple of days. It can be frozen, but should be consumed within a month.
