The flatbread with artichokes and ham is a delicious dish made with pizza dough and filled with artichokes, ham, and good cheese.
Very simple in its execution, it’s ideal for a tasty dinner.

Ingredients
- 10.5 oz semolina flour
- 5.3 oz all-purpose flour
- 1 tsp dry yeast (not instant)
- 1 tablespoon extra virgin olive oil
- 1 teaspoon sugar
- 9 oz water
- 8 artichokes (medium size)
- 2.8 oz cooked ham (thin slices)
- 3.5 oz cheese (like fontina)
- 2.1 oz Grana Padano, grated
- 2.5 oz onions (fresh)
- 1 bunch parsley
- to taste salt
- to taste black pepper (freshly ground)
- to taste extra virgin olive oil
- juice of half a lemon

Preparation

To prepare the flatbread with artichokes and ham, you need pizza dough that has already risen, which you can buy ready-made (750 grams) or make following the ingredients above and the procedure indicated by clicking here.Then clean the artichokes by removing the tougher outer leaves and cutting the softer ones in half.
If the artichokes you have are not tender, it’s better to remove all the leaves and take only the hearts.
At this point, cut the artichokes into quarters, remove the beard in the center, and slice not too thinly, placing them in lemon water.
In a saucepan, sauté the fresh onion, artichokes, and parsley, season with salt and pepper.
When they are seasoned, add a little water (considering that they should be dry at the end) and, at a low flame and with the lid on, cook the artichokes until a fork easily pierces them.
Let it cool slightly.

Roll out more than half of the pizza dough on a floured sheet of parchment paper and use it to line a baking pan creating high edges.
Place the artichokes and half of the grated Grana on top.
Next, add the torn slices of cooked ham, cubed cheese, and the remaining Grana.
Finish with a drizzle of olive oil.Close with the remaining pizza dough rolled out thinly, seal well at the edges, and make a central vent.
With oiled hands, slightly press the surface to level and compact the filling.
Bake at 392°F, in a static oven, in the middle part of the oven, for about 35 minutes or until the crust is evenly colored.
The flatbread with artichokes and ham is ready.
Let it rest for about ten minutes before serving.
Storage
In the fridge well-sealed for a couple of days.
