Braised Green Beans with Sauce and Eggs

Braised green beans with sauce and eggs is a complete and tasty dish, prepared with fresh green beans and tomato sauce, to which cheese and eggs are added at the end.

By the end of cooking, the green beans will be soaked in a delicious sauce, making the dish even more enjoyable to eat. They are great hot or cold.

One can choose to omit the eggs and consume the braised green beans with tomato sauce as a side dish to red meat, chicken, or fish.

If they are out of season, frozen or precooked green beans can be used for this recipe.

Ingredients

  • 9 oz green beans
  • 1.25 cups tomato purée
  • 2 eggs
  • 1 clove garlic
  • 0.7 oz cheese (Galbanino)

Preparation

  • To prepare the braised green beans with sauce, sauté a garlic clove in extra virgin olive oil in a non-stick pan.

    When golden, remove the garlic.

    Pour the tomato purée into the fragrant oil and season with salt.

    If the sauce has a slightly acidic aftertaste, add half a teaspoon of sugar.

    Taste to check if the acidity has been corrected, adding a bit more sugar if necessary, but don’t overdo it.

    Cook for about 10 minutes.

    Meanwhile, wash and trim the green beans and blanch them for about 3/4 minutes.

    Remove the green beans from the water with a slotted spoon, drain for a few seconds, and release them directly into the cooking sauce.

    Add a little water to finish cooking.

    They’ll be ready in about 10 minutes.

    A few minutes before turning off the heat, add cheese cubes and stir.

    You can choose to serve the braised green beans with sauce this way, or, as I usually do, add the eggs.

    This way you’ll have both a second course and a side dish with a great sauce for dipping bread.

    In this case, as soon as you add the cheese and stir, make small spaces in which to crack the eggs directly.

    Cover the pan with a lid for enough time to cook the whites while keeping the yolks very runny.

    Turn off and serve.
