Ingredients
- 2 1/8 cups Flour
- 2/3 cup Milk
- 2.5 tsp Fresh Brewer's Yeast
- 2 tbsp Sugar
- 1 tbsp Extra Virgin Olive Oil
- Lemon Zest
- 3 tbsp Apricot Jam
- to taste Dried Cranberries
- to taste Sliced Almonds
Preparation
To make the brioche bread wreath, warm the milk and dissolve the yeast and sugar in it. Add the obtained mixture to the flour and work the ingredients together. Add the olive oil and finally incorporate the grated lemon zest.
Knead until you get a smooth and soft ball (it should not be sticky, if necessary, add a little more flour). Cover with a cloth and let rise for 2 hours, until doubled in size.
Once the two hours have passed, take back the dough and roll it out on a floured surface, trying to give it a rectangular shape about 1/5 inch thick (photo 1). Spread the apricot jam on the dough, then add the cranberries and sliced almonds (photo 2). Roll the brioche to form a cylinder (photo 3).
Cut it in half lengthwise, starting 1 inch from the outside inwards (photo 4). Braid the two pieces obtained, sealing the end (photo 5). Place the braid on a baking tray lined with parchment paper and place a round mold in the center (photo 6). Let rest for 45 minutes.
Bake in a preheated oven at 356°F for about 20 minutes, until golden.
