I really like spoon desserts they are always a sweet temptation for me, and today I have prepared a new semifreddo, a spoon dessert called, by Italianizing a French term, perfect with amaretti!
In Italian cuisine, the word parfait (perfect) indicates a delicate dessert, a semifreddo made with eggs, sugar, and whipped cream to which various ingredients or flavors are added, in this case, amaretti. It is not too sweet as I like, and the Marsala liqueur leaves a pleasant note that lingers on the palate… Voilà the doses!

Ingredients for PERFECT WITH AMARETTI RECIPE
- 4.2 oz dry amaretti biscuits (+ 5/6 for decoration)
- 1.5 cups liquid fresh cream
- 4 egg yolks
- 4.2 oz powdered sugar
- 4 tbsps Marsala demi-sec
- 1.8 oz dark chocolate

Preparation
To prepare the delicious perfect with amaretti we need to finely crumble the dry amaretti biscuits.
Then whip the cold cream with an electric whisk. Beat the egg yolks with the powdered sugar until they are frothy and light in color.
Add the Marsala liqueur, the crumbled amaretti, and finally the semi-whipped cream to the egg and sugar mass. Use a flexible spatula and gentle movements to not deflate the amaretti dessert mixture.
Place everything in a single loaf pan lined with plastic wrap (or portion-sized if you prefer).
Put it in the freezer for 4/5 hours or until ready to serve.
To quickly unmold the parfait with amaretti, pass the bottom of the mold under hot running water for a few seconds and place it on the serving plate.
Melt the dark chocolate in the microwave or in a bain-marie, and after putting it in a pastry bag, make some decorative swirls on the surface, finally add some whole amaretti and … serve!
