TASTY SPAGHETTI with sausage and olives

Tasty spaghetti with sausage and olives is a flavorful first course easy to make, with an intense and balanced taste.

Spaghetti (thin string) is the most sold pasta shape and surely a symbol of Italian culture abroad, and with this beautifully intense sauce it becomes a perfect dish for those who love bold and intriguing flavors…definitely a must-repeat in my kitchen!!!

TASTY SPAGHETTI WITH SAUSAGE AND OLIVES

Ingredients for TASTY SPAGHETTI with sausage and olives RECIPE

  • 320 g spaghetti
  • 1 clove garlic
  • 2 shallots
  • 200 g sausage (I use luganega)
  • 500 g Tomato purée (I use Mutti cherry tomato sauce)
  • 50 g pitted Taggiasca olives (I use Aldi)
  • to taste Extra virgin olive oil
  • to taste basil
  • to taste salt and pepper

Preparation of TASTY SPAGHETTI RECIPE

  • Peel the garlic clove

    and chop the shallots.
    Place them in a pan with extra virgin olive oil and let them sauté for a couple of minutes.
    Now add the crumbled sausage with your fingers and continue cooking for another 5 minutes.

  • Add the tomato purée, olives, and some leaves of fresh basil.

    Season with salt and pepper and continue cooking for about twenty minutes.

    Meanwhile, bring water to a boil in a pot for cooking the pasta.

  • Salt the pasta water (about 10 grams per liter) and when it boils cook the spaghetti.

    Drain them al dente reserving a little of the cooking water to toss the pasta.

  • Transfer the spaghetti to the pan with the sauce and toss it joyfully, adding a bit of water and more basil.

  • A very tasty dish, the tasty spaghetti with sausage and olives to which you can add grated Parmesan cheese if you wish…

  • This time I didn’t because it’s already savory and complete for me! Enjoy your meal!

If instead of this delightful Mutti cherry tomato sauce you use a tomato purée, add a little sugar as my mom taught me to balance the slightly acidic taste of the purée…
