Ingredients

  • 7 oz zucchini
  • 9 oz canned cherry tomatoes
  • 1/2 teaspoon dried oregano
  • 1 clove garlic
  • 3 oz fresh mozzarella

Steps

  • Wash the zucchini, remove the ends and slice them diagonally, not too thin.

  • Sauté the garlic, add the cherry tomatoes with oil and cook for 5 minutes, then add the zucchini, sprinkle with oregano and continue cooking for another 5 or 10 minutes.

  • The thinner they are, the less cooking time needed. Lastly, add the fresh mozzarella slices and cook with the lid closed until the cheese melts.
