The coffee cheesecake in a glass is perfect, it takes 5 minutes to prepare and is great to serve after lunch or dinner with cream, mascarpone, and instant coffee or moka coffee if you prefer.
The coffee cheesecake in a glass recipe is very simple, when I’m short on time, I use instant coffee, it mixes with the other ingredients and in a few minutes the cream is ready to be served by the spoonful or to make a cake.
Those who do not prefer coffee can always try the lemon cheesecake, apricot, or pistachio version, great variations and really excellent and all to be enjoyed by the spoonful in single-serving versions.

Ingredients
- 9 oz mascarpone
- 1 cup whipping cream
- 1 tbsp sugar
- 2 tbsp instant coffee
- as needed cocoa cookies (pan di stelle)
Steps
Pour the cream with the mascarpone and sugar in a tall bowl.
Work with an electric whisk and add the instant coffee while continuing to whisk.
Crumble a cookie for each cup, 2 or 4, pour the mixture, decorate with a cookie, and place in the fridge to rest for about half an hour.

A simple and very creamy spoon dessert, if you don’t prefer cream it can be removed and replaced with mascarpone or with ricotta, Philadelphia, Greek yogurt, or combine these creamy cheeses to make a lighter dessert.
I find instant coffee perfect, but you can always use moka coffee, obviously made and cooled beforehand.
