Ingredients
- 5.3 oz cocoa cookies
- 5 tbsp butter
- 0.85 cup heavy cream
- 1 egg yolk
- 2 tbsp sugar
- 1/2 pod vanilla
- 10 sour cherries with syrup
Steps
Chop the almonds with a mixer, add the butter, and chop again.
Line a 8-inch pan, arrange the cookies, and make a border of about an inch, then put in the freezer.
Mix the egg yolk with the sugar, heat the milk with the vanilla seeds, then pour them over the yolks in a thin stream, on the stove, and work with a whisk by hand.
Place the small pot in a larger one and work in a water bath for a few minutes, then let it cool.
Whip the cream and add the custard, work a little, add the sour cherries, and pour everything into the cookie shell.
Put in the freezer for about an hour.
