The apricot cake in a pan recipe is very simple, everything is mixed with an electric whisk then poured into a pan over the apricots, cooked for about 20 minutes and remains very soft.
You can enrich it with dried fruit if you prefer, and if you don’t like apricots, it’s great with peaches, apples, or chocolate.

Ingredients
- 3 eggs
- 1/2 cup sugar
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 6 apricots
- 1/4 cup milk
Steps
Beat the eggs with the sugar until they double in volume using electric whisks.
Add the sifted flour and baking powder gradually while continuing to whisk.
Add the milk, stir again.
Butter a 9-inch pan, sprinkle a few tablespoons of sugar, cut the apricots in half or into pieces and arrange them in the pan.
Cook for a few minutes, as soon as the sugar starts to melt arrange the apricots, then pour the batter and cook with the lid closed for 10 minutes over very low heat on the smallest burner.
Check the bottom to ensure it doesn’t burn, butter another identical pan or a plate and flip the cake.
If using the same pan, slide the cake from the plate and continue cooking for another 10 minutes.
