The recipe for pizza with potatoes and sausage is made with the Neapolitan pizza dough pressed into the tray, so it is not a thick focaccia and is very digestible because it contains little yeast.

I filled this pizza tray with sausage and potatoes for a change, although friarielli would have been perfect, but the little one at home doesn’t like them, of course, you can fill it as you prefer.

Ingredients

  • 4 cups all-purpose flour
  • 0.07 oz fresh yeast
  • 1.5 cups water
  • 1.5 tsp salt
  • 0.66 lbs sausage
  • 0.44 lbs potatoes
  • 0.33 lbs mozzarella (fiordilatte)

Steps

  • Dissolve the yeast in the water, add the flour and mix, add the salt and knead well; if the dough is too sticky, dust your hands with flour or grease them with oil and finish kneading.

  • Shape a rectangle with your hands without using a rolling pin, fold the short side towards the center and cover with the other short side, make a ball and let it rest for a couple of hours.

  • Then take the dough, repeat the folding sequence, form a ball, and let it rest overnight in the fridge in a food bag or a container covered with plastic wrap or a damp cloth.

  • The next day, after about 10 hours, take the dough and let it rest at room temperature for 15 minutes, then do another round of folds and let it rest for 4 hours.

  • Take the dough and roll it out on the work surface, place it on parchment paper, and transfer it to a baking tray, grease it well and set aside.

  • Remove the casing from the sausages and crumble them into a pan, cook without adding oil, leaving the meat slightly pink.

  • Then cut the potatoes into 1/8 inch slices with a knife, do not use a mandoline otherwise they become too thin and arrange them on the pizza.

  • Add the sausage, bake in the preheated oven at 482°F for 12-15 minutes then remove from the oven, top with crumbled and sliced mozzarella, a sprinkle of oregano, and bake again.

  • Cook for 3 minutes, remove from the oven and cut into 6 or more pieces.
