Preparation of the Simple and Soft Cocoa Cake

  • In a large bowl, beat the eggs with the sugar until you obtain a light and frothy mixture. This step is essential for a soft and well-risen cake. Gradually add the previously melted and cooled butter and the milk while continuing to mix with an electric whisk.
    In a separate bowl, sift together the flour, unsweetened cocoa powder, baking powder, and vanillin. This step avoids the formation of lumps in the batter.
    Gradually incorporate the dry ingredients into the liquid mixture, stirring with a spatula or whisk until you obtain a smooth and homogeneous batter.
    Pour the batter into a 9-inch cake pan previously greased and floured (or lined with parchment paper). Level the batter with a spatula and bake in a preheated static oven at 350°F for about 35-40 minutes. Check the baking with a toothpick: if it comes out dry, the cake is ready.
    Let the cocoa cake cool completely on a wire rack before removing it from the mold. Dust with powdered sugar before serving.
