Ingredients
- 2 cups all-purpose flour
- 7 tbsp extra virgin olive oil (or vegetable oil)
- 2 eggs
- 1/3 cup sugar
- 1 tsp baking powder
- 1 lemon zest
- as needed apricot jam
Steps
Pour the flour into the processor, add the sugar, baking powder, oil, and one egg, start mixing then add the other egg.
If the dough is too soft, you can add a bit of flour.
Take the dough, form a ball, and roll it out on a floured workspace, create a rectangle and fill with jam.
Stay within the borders by a couple of inches, roll it up and seal the ends, wrap the roll in baking paper and place in the hot oven at 350°F
Bake for 20 minutes, then remove the paper from the top, uncover the roll, and continue baking for another 10 minutes or so.
Remove from oven and let cool before slicing.
