The lemon arancini recipe is a variation of the typical Marche orange arancini, made with a simple dough by hand or with a mixer, left to rest, and then used to create these small rolls.
They are fried but can also be baked if desired. Of course, during Carnival, every fried treat is welcome, but for a lighter dessert, the oven is perfect.

Ingredients
- 1 1/4 cups all-purpose flour
- 1/3 cup sugar
- 1 egg
- 1 tsp fresh yeast
- 1/4 cup milk
- 2 tsp butter
- lemon zest
Steps
Dissolve the yeast in the milk, pour the flour into a bowl or mixer, and add the sugar, butter, egg, grated zest of half a lemon, and finally the milk.
Knead well, then form a ball and let it rest until doubled in size in a bowl covered with plastic wrap, about 3 hours.
Take the dough and roll it out on a floured surface, create a rectangle, add lemon zest, a sprinkle of sugar, and a splash of lemon, then roll up the dough.
Cut the roll into 3/4 or 1/2 inch thick slices, then heat the oil in a deep pan or fryer.
Cook, turning them over, then drain on kitchen paper and dust with powdered sugar.
