I love eggs alla pizzaiola, a simple and delicious main course that is prepared in a few minutes, perfect for a last-minute dinner, an inexpensive and light dish with ingredients you usually have at home.
Eggs alla pizzaiola are my son’s favorite dish, I used to make them just for myself when I didn’t have time, sometimes I add a bit of mozzarella or provolone, whatever I have at home or nothing, just a simple sprinkle of oregano and that’s it.
Of course, they can be enriched in many ways, with the addition of grated Parmesan, chopped vegetables like zucchini or eggplants, squash or peppers, depending on the season there’s always a wide choice of vegetables.
An inexpensive dish rich in protein, light even if cooked in a pan, and if you want, it can also be baked.

Ingredients
- 3 eggs
- 1 1/4 cups canned cherry tomatoes
- 1 clove garlic
- 2.1 oz provolone
Steps
In a pan, brown a clove of garlic with skin and then remove it and add the canned cherry tomatoes or tomato puree, cook on low heat for 5 minutes.
Add the eggs and pieces of provolone or mozzarella if you prefer, or you can leave them out for a lighter dish, cook for another 5-7 minutes then add chopped parsley or oregano and serve.
