Quick Tart with Potatoes and Speck

Ingredients

  • 2 cups all-purpose flour
  • 2 eggs
  • 3.5 tbsp extra virgin olive oil
  • 2 tbsp water
  • 1 tsp salt
  • 1 egg
  • 4.5 oz speck
  • 3.5 oz smoked provola cheese
  • 2 cups potatoes

Steps

  • Peel the potatoes then slice them very thin with a mandoline, vegetable peeler or a knife, cook them in a pan with a bit of water for 3 minutes after boiling then drain well.

  • Prepare the savory pastry, pour the flour into a bowl or on the work surface, add the salt, eggs, oil, and cold water, knead well and if needed add a little water.

  • Roll out the pastry on the table, set some aside for the top strips, and place it in an 8.5-inch baking pan.

  • Fill with potatoes, add the beaten egg with a pinch of salt, the sliced cheese, and the speck.

  • Make the strips and cover the filling, then bake in the preheated oven at 350°F and cook for 25 minutes until golden.
