Ingredients

  • 4 slices sandwich bread
  • 0.7 oz speck
  • 2.1 tbsp mayonnaise
  • 2.1 oz ricotta cheese
  • 2 olives

Steps

Obviously, depending on the size of the molds, the amount of bread needed for the appetizers will vary.

  • Cut the bread with a 2-inch star mold, each appetizer consists of 3 stacked stars, like typical puff pastry vol-au-vent, with one whole and two with a hole.

  • Then, make a hole with a smaller star mold in two pieces for each vol-au-vent, so you will need to punch out 6.

  • Mix the ricotta with a bit of pepper, salt to taste, and spread it on the first piece, then stack with the others, aligning them; fill the center with more ricotta.

  • Add the speck and chopped olives, sprinkle with oregano, and cover the appetizer with mayonnaise.
